Funeral Potatoes
Everyone is partial to their funeral potatoes recipe, here's ours!
- 5 lbs potatoes
- 1 onion chopped
- 1 cube butter
- 2 cans cream of mushroom soup
- 1 C (or more to taste) sour cream
- 2 C grated cheddar cheese + more for top (can use blend of cheeses)
- Salt and pepper to taste
- Garlic salt to taste (optional)

Crushed buttered corn flake topping (optional)
Boil or bake potatoes in their skins until soft. Peel and slice into a large bowl. Sauté onion in butter until tender. Add to potatoes.
Mix sour cream and soups in a small bowl. Add to potato mixture.
Mix all together with salt, pepper and garlic salt (optional). Fold into a greased 9x13 pan or a half size steam table pan for easy clean up.
Top with more grated cheese and buttered, crushed corn flakes (optional).
Cover with foil and bake at 350 degrees for 30 minutes or until heated through. Remove foil for the last 5 minutes.
I double this for funerals and use a full size foil steam table pan.
